Organic Vital Wheat Gluten is a powdered flour that is not actually a flour!
The wheat flour undergoes a dehydration process to remove any other ingredients found in flour leaving almost pure activated gluten and very little starch content. Once it is dehydrated it is then dried and made into a powder which can be used for baking bread and cakes.
